Today I prepared three delicious snacks using raw, vegan bread – my latest discovery. Two of them are vegan and one is vegetarian. They are easy to make and therefore perfect as a quick and healthy lunch at work or as a starter. Take a look and tell me what you think!
Although, I’m not a vegan, I really like vegan cuisine. I appreciate its lightness, creativity and above all, its nonviolent self-sufficiency i.e. a total renunciation of animal products. Bredisflaxseed live bread is my newest discovery and a great alternative to traditional bread at the same time. I don’t know whether you also sometimes don’t feel like eating bread as it simply feels boring or it’s easy to eat to much of it. I do. Not being a fan of crackers or puffed rice breads, I really love this one. Bredis bread is not only vegan and raw, but also totally organic and superb healthy since it contains raw i.e. dried under the temperature of 42 degrees, ingredients: flaxseed, veggies and sea salt. That’s it! There are no hidden and unnecessary surprises like raising agents, flavor enhancers like caramel sirup or even flour. It’s suitable for people with food allergies and intolerance, those on a diet and mostly, for those who want to know what they eat.
There are three flavours to choose from: flaxseed and sunflower seeds, sun-dried tomatoe and basil, onion and garlic.
1 Vegan Lunch
Raw vegan breads with homemade guacamole and a vegan, organic beetroot-horseradish spread. Fresh cucumber goes well with the spread.Guacamole: 1 avocado, 4 cherry tomatoes, 1/2 onion, 1 garlic clove, salt, pepper and a few drops of a lemon juice. Mix with a hand blender. My type for guacamole is the sun-dried tomato and basil. The milder flaxseed and sunflower seeds flavour combines nicely with the spicy beetroot and horseradish.
2 Vegan Lunch
Bredis Onion-garlic and flaxseed-sunflower are great with this fresh and peppery salad with rucola, cooked beetroot, cherry tomatoes and walnuts. Finish it with a dash of white balsamic vinegar mixed with a little olive oil. Voila!
3 Vegetarian Lunch
Bredis with goat Camembert and chopped parsley with sea salt and a dash of olive oil and lemon juice. Sun-dried tomato-basil or onion-garlic seem a natural fit to me.
Bredis contain 2 x 3 slices per box and can be easily eaten on the go or taken to the office.
