Vegan shiitake red curry tempts with its warm colours and stimulates the immune system. Shiitake mushrooms and red peppers are packed with vitamins and minerals.
Shiitake are one of my favourite mushrooms. They have a rich, woody flavour and a meaty texture. They are a great meat substitute for vegetarians and vegans. They have been known in China and Japan for centuries and are believed to have very high immune-boosting properties.

Rich in minerals potassium, phosphorus, selenium, magnesium, copper
Good source of dietary fibre and plant protein
Contain lentinan – anti-cancer, anti-viral, anti-bacterial, cholesterol-lowering compound
100 g shiitake mushrooms
2 red peppers
1 yellow pepper
red curry paste free from sugar and flavour enhancers (or your own curry mix)
Chop shiitake and onion and fry it with some olive oil.
Chop other ingredients and place in the frying pan.
2 – 3 tbsp of the red curry paste with the coconut milk and add to the other ingredients.
Cover and steam for additional 10 – 15 min.
Serve with rice and enjoy!
